Jerk Chicken - What is it? And, why is it so good!?


There are several theories as to how "jerk" became attached to the process of preparing these deliciously spicy meats in Jamaica. The term "jerk" is thought to orginate from the Spanish term "charqui" of Quechua origin which means jerked or dried meat. Perhaps the term comes from the process of jerking meat, which is making holes in the meat for flavor absorption.

The origin of Jerk Chicken is thought to go back to the early years in Jamaica when the Maroons expanded cooking techniques from Africa and combined their approach for meat preparation with the available spices in Jamaica.

The most common jerked meats include chicken, pork and fish. Occasionally, beef, goat meat and even fruit and vegetables can be prepared with jerk seasoning and cooking techniques.

Chicken is the most commonly "jerked" meat which is typically of the free range variety without antibiotics and growth hormones -- so, very organically raised with the addition of local herbs and spices that are toxin-free.

Jerk seasoning is a complex blend of scotch bonnet peppers, allspice, black pepper, scallions, onions, salt, thyme and several other spices grown on the island.

Jerk seasoning is applied to the meats as a maranade or paste after which the meat is slowly cooked (smoked) on pimento wood typically with metal sheets (sometimes plantain leaves) covering the meats to maintain moisture and flavor.

I've had the opportunity to try jerk chicken and pork from several restaurants around the island. Every location served a wonderfully prepared jerk dish along with tasty sides such as festivals, steamed vegetables or yam.

Scotchie's remains our favorite spot to grab lunch or dinner to go; or dine in, with seating on the rustic but comfortable benches and rum barrels. Scotchie's has two locations - one on Falmouth Road in Montego Bay and the second location in Salem, Saint Ann parish.

You will not be disappointed by Scotchie's at either of these locations. Our favorite is Scotchies located in Montego Bay. The food is wonderfully prepared and the staff....they are simply the best!
